Whenever I do that, it's to get it out of the way before an anticipated rush comes.
I always shut down the one furthest away from the handoff.
I am not saying I don't understand shutting down one of them. It's shutting down the one right next to the hand off, ie, the one that's supposed to be primarily used and not shut down first.

does it matter? just use the other bar.. when I close bar (which is never) I don't really care which is shut down first... as long as I have something with which I can make drinks.
It does, for several reasons. One, who is barring has to hand off the drink farther... Its just more work. Not THAT much more work, but it just doesn't make any sense. And it kind of creates a space away from the person and the customer - and for some people that could be intentional - but it can make customers feel uncomfortable.
@MP: what you described does not apply to every store. My store shuts down the one furthest from the hand-off counter. We don't even shut down the machine until after preclosing is done.
Partners develop a preference for a particular espresso machine. Maybe because it gives less problems on a daily basis, the aerating quality of the steam wand is better, or it gives a more consistent shot pulling time.
The reason why we don't like the one furthest from the hand-off? Less room to line up the cups in front of that machine.
when i closed bar i'd clean cycle one machine, wipe it down vacuum grinders, send the parts back to be sanitized ect... then I'd refill the hoppers and put that bar back together and use it while i cleaned the other one... I'd have both cleaned before we locked... that way I can just give it a quick wipe down after close If I had to... I don't GAF if shots were pulled after the cycle as long as it's cleaned once a day it's fine. we refill the hoppers at close anyway too... I know some stores leave them empty.
At the stores I've worked at, we always close down the machine farthest from the hand-off. But we don't have pre-closers... so, it's up to whoever is actually going to be using the bar, which machine they want to shut down first.
I usually ask whoever is on bar which machine I can take so that the barista gets to use the bar that they prefer.
