I work in a licensed store. And we are incredibly clean. Floors mopped nightly, -Everything- goes through the wash when I do a close, Including the containers that hold straws, lids, etc., and Ive seen others in my store do the same. Pumps are taken apart and soaked, Date dots are checked, Carafes are timed, pastry case is cleaned daily, Sinks are refreshed regularly. Not following any of that, is an immediate write up. 3 write ups, you lose your job. I can't speak for other stores, but My boss is very strict on this. I agree we're overworked, underpaid, and most of my coworkers don't give a ****. But there are some there working very hard to meet standards if not go above. I take pride in that.
I've been in full-on Corporate stores where I'm looking behind the counter going, "Damn. My boss would raise hell on these people. What the hell is that, and that?" I think it depends on the crew involved, the manager, and the system in place.
I would take great offense if someone treated me like I knew my job any less for working in a licensed store. I even know how to work with your Full stores hot foods because it was in training and we went over it briefly just to make sure I understood if I ever went to another store. I had the same licensed training material full stores got, I have the same set of drink cards that everyone else studied, I went through the same certification process, and our DM has even come in and checked each of ours RBR and knowledge of the drink recipes. The only thing I probably don't know how to do, is work with the brew system full stores have, cadences, etc. And even then, I know how to clean that setup as we recently received the revised cleaning process bulletin on both airpots and brewing along with the new "Cleaning in Progress" tags.
And no, there is no Hazelnut in there, Its Toffee Nut.
Love the customers who tell me they want more caramel syrup in there. "Ma'am, we put the caramel on top, its toffee nut in the drink. Which one are you wanting less of exactly?"
